what's going on here
Not very much! There's roughly two things that carry over, and both are explained at the same time.
In short, System Shock 1 took place on Citadel Station. An unnamed hacker was hired by a man named Diego to remove ethical constraints from the AI, SHODAN.
SHODAN goes crazy, and murders everyone. The Hacker pulls the plug.

Ingredients
Juice of 1/4 of an orange
Juice of 1/2 a lime
1 avocado seeded and scooped out of skin
2 tablespoons roasted and charred Roma tomatoes diced
1 Serrano pepper roasted seeded and diced
1 tablespoon medium dice red onions
1 teaspoon chopped cilantro
coarse ground salt to taste (sea salt is better)
Directions
Squeeze juices into bowl. Add avocado and coarsely chop. Add onions, roasted tomato, serrano and cilantro fold into avocado mixture. Add salt (more is better). Result should be crudely chopped not mashed. That's it.

Yeah, there should be a controls section in the options menu. Main Menu -> Options -> Controls. Select the control you want to change, click "clear", then "bind", then type the new letter. Go through the list and make sure everything has a hotkey - I think the GOG version lacks a few bindings.
Mostly I'd say bring the movement up to standard - w for run forward, s for back, a and d for strafing. q/e for leaning. CTRL for crouch.
That sort of thing.

I am currently tabbing in and out of use mode and trying to comprehend it
I'm looking... I can't find the exact one I used to use. I remember it was ridiculously easy, just 3 avocados blended with agave nectar and cocoa powder. Really healthy and really delicious and takes care of chocolate/sugar cravings marvelously. Just google "chocolate avocado mousse" and try to use a recipe that doesn't undo the healthiness by having you add brown sugar or chocolate chips or whatever else.
Basically you do everything but shooting/combat in use mode.
Shoot mode is for shooting.
