copper fox, out of virginia, does something similar with its rye. they use apple or cherrywood chips iirc.
it's completely delicious, though rye has a broader profile than bourbon.
i went to a distillery presentation a few weeks ago and the head distiller - an MIT biochem phd - talked a little about pressure chipping. he said that in terms of "extracting wood flavors" it works just as well barrel aging and is faster.
on the other hand, he said that distillates with volatile compounds (read: white dog and eau de vie) have a lot of other important reactions in a barrel - including enzymatic reactions, reactions catalyzed by the presence of burnt wood, and some simple decays - take a lot longer and are neglected by these pressure-chipping methods.
so i guess there are tradeoffs. if you get a chance to try copper fox rye, though, i definitely recommend it. founding farmers in dc uses it as their house whiskey.

I worked orientation for my undergrad a few summers. These people would swoop around after their kids and check things off the schedule and their list of "ask this pointless question that my kid doesn't care about".
It's like.
Ok, you love your kid and as a middle class white you have never let them experience difficulty. That's great.
But they're in college now. They're gonna get drunk, they're gonna have STD scares, they're gonna almost fail a class and there's nothing you can do from Wayne, NJ to stop that so go along with the rest of the parents in the cafeteria and enjoy the wine and cheese that the alumni are preparing while I tell your kid the best times to score free coffee out of the library.
